This week is going to be great, I just know it. Here is the good things in my world right now!
1. First off, I am doing good on my 'no coke' goal. Since last Monday, I have had one coke with dinner on Friday night. Whats even better? I have cut my un-sweet tea drinking to just at dinner time. The rest of the time its water. Yay me!
2. My twin brother is home for good from Afghanistan. Imagine my surprise when I saw that he was 'channeling' his inner-Willie from Duck Dynasty. ROFL
3. I am caught up with my Project Life and will have that posted tomorrow.
4. In fact, I have been working on several layouts for upcoming assignments. I have been inspired lately and its all good!
5. I made this zucchini and potato bake. And it is fabulous + fabulously easy. Thats a win-win in my book. Here is the recipe.
Zucchini + Potato Bake
Ingredients
2 medium zucchini, quartered and cut into large pieces
4 medium potatoes, peeled and cut into large chunks
1 medium red bell pepper, seeded and chopped
1 clove garlic, sliced
1/2 cup dry bread crumbs
1/4 cup olive oil
paprika to taste
salt to taste
ground black pepper to taste
Directions
Preheat oven to 400 degrees F (200 degrees C).
In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.
